Taste the (Healthy) Rainbow

Rainy days can become intolerable. And, spring in the south has as many rainy days as sunny.

We like to make this easy (and healthy) treat to remind ourselves that it won’t rain forever. (Probably).

A rainbow in a cup, topped with a cloud of whipping cream (and some of those little white sprinkles that look like tiny hail – personally I hate them. But, Alli is a fan).

A quick trip to the grocery to find fruit in the right colors is an activity in itself. We like to mix it up and see what different fruits we can use each time. It’s a great way to introduce kids to new foods in a fun way. These are some of the ones we’ve tried:

Red: Strawberries, raspberries, watermelon, and blood oranges.

Orange: Oranges, cantaloupe, mango, and peaches

Yellow: Pineapple, yellow watermelon (end of list – pineapple is usually the yellow fruit of choice)

Green: Kiwi, green grapes, green pears.

Blue: Blueberries. (I have literally no idea what other blue fruits exist – mom fail).

As you can see in the picture, we skipped purple this time, but we have used purple grapes and blackberries (Yeah, not really purple, but close enough).
